Gin Herbalist - Inspired by the gorgeous Corsican cheese 'Fluer de Marquis'. Gin Herbalist is a Sheeps milk cheese matured under a coating of upcycled Gin aromatics from Hartshorn Distillery just next door.
The cheese exhibits classic gin-centric flavours of juniper, coriander & citrus. However, you will also notice a touch of lemon & anise myrtle, wattle seed, and Tasmanian pepper leaf. These botannicals enhance the herbaceous flavours naturally present in sheeps milk cheeses.
Primavera - Inspired by Spain's most famous cheese - Manchego**. Primavera is made with the earliest available spring milk and captures the youth and brightness of the season. Producing a cheese exhibiting a gentle nutty sweetness and a lightly gamey herbaciousness. This cheese can change dramatically in flavour depending on how long it has been matured for, with the younger cheeses being milder and creamier, while the older cheeses become much more piquant and salty.
Journeyman - An aged Manchego style cheese, the Journeyman has been producd by GrandVewe for over 20 years. Matured for 2 years, it's got a bitey finish and depth and complexity that is unmatched.
**Fun Fact! Much like Champagne, Manchego is a protected name. It can only be given to cheeses produced in La Mancha (Spain), made from the milk of Manchega Sheep, and aged from 2 to 24 months. The more you know!
