Founded by husband-and-wife team Dave and Bec, Saison Salumi is born from a deep love of slow food, sustainable farming, and old-world charcuterie. With backgrounds in butchery, hospitality, and fine food, they handcraft each small batch using premium Australian meats, natural casings, and traditional curing methods - no additives, no shortcuts. The result is salumi that’s bold, honest, and full of character.
Squid Ink & Black Truffle:
Lush and indulgent, with black truffle and squid ink bringing a deep umami richness. Best enjoyed as is, sliced thinly and allowed to come up to temperature so that all the flavours and textures can be enjoyed in HD.
Native Pepperberry:
A uniquely Australian blend of savoury pork, garlic, anise myrtle and native pepperberry for a subtle, fragrant heat. This salami is earthy, sweet and salty with spicy-peppery notes that build on the back palate.
Pork Cheek Pepperoni:
A shorter fermentation time giving some acidity, then hot-smoked overnight, combined with house spice mix of birds eye, habanero and red jalapenos create a pepperoni that’s smoky, rich, and full of flavour.
Wagyu Bresaola:
8+ marble score wagyu, brushed with garlic, salt and pepper. This beautifully marbled wagyu beef delivers a buttery texture and refined, savoury notes.
Korean Chilli:
Inspired by Korean flavours, this salumi is bold and spicy with fermented chilli and gochugaru heat.
