Bahen & Co. - Chocolate Bars
Bahen & Co. have raised the bar for both chocolatiers and chocolate aficionados here in Australia…pun intended.
Jacqui & Josh Bahen traded in their former lives as vignerons to focus instead on producing potentially Australia's most traditional and ethical chocolate. They currently source their beans directly from farms in Madagascar, Papua New Guinea and Brazil. Ensuring that hard-working farmers in these countries are fairly compensated for their craft.
Bahen & Co. have embraced an ‘old-world’ philosophy and methodology when it comes to processing their beans. They choose only to buy naturally slow-fermented cacao that allows the full flavour of the beans to be unlocked. Further to this, the primary equipment they use at their factory in Margaret River, WA is probably older than your Grandma - a restored 1930’s Barth Sirocco Ball Roaster and circa 1910 Guitard Melangeur.
